Curator’s note
The Giesen W6A runs inside the café rather than out back somewhere, USDA Organic since June 2022, on green arriving through a named Veracruz partner. Only the ASOPCE Guatemala gets the full treatment on paper — producer, varietal, altitude, process — while the rest of the organic shelf asks for trust in the certification alone, and no bag prints a roast date.
The coffee
Eight certified-organic coffees, every one roasted in-house on a Giesen W6A at a profile the shop holds around medium, though only the Guatemala carries a full origin block and no bag shows a roast date.
The space was a dark, sloped concrete shell with no gas line, and Aharon Vaknin converted it himself — a contractor's build, down to the hand-crafted wooden counters facing the windows. He also took the dividing wall out.
