Curator’s note
Most second rooms of a roastery pour the house espresso and stop. Robertson runs the Mar Vista single origins through a filter bar instead — five of them, each named to producer, varietal, process and elevation, and not one carrying a roast date.
The coffee
Roasted in house at the company's Mar Vista shop, close to daily and only from lots in season, with a light-roast lean and full producer, varietal, process and elevation detail on every single-origin bag.
The Robertson bar runs single-origin pour-overs alongside espresso and a Gibraltar, with the syrups made in house.
