Curator’s note
Four manual cups on the board at once, each with its origin and process spelled out, at a point when most bars have dropped manual brew — the red-honey El Salvador is the one to sit down with. The in-house roasting is paused while the roastery gets rebuilt, and whoever is filling the hopper meanwhile goes unnamed, which is the one thing the counter ought to be able to answer.
The coffee
Four manual brew cups list process, body and acidity, and retail runs four single origins named to origin, process and producer level, all of them currently sold out while the in-house roasting sits paused. The partner roasters filling in during the rebuild go unnamed.
Manual pour-over is the stated identity, on a menu that also carries a ceremonial matcha program and Korean-cafe signatures like the misugaru latte.
