Curator’s note
Bird Rock's owner has worked exclusively with one farm in Nariño for sixteen years, Padre Joe's Finca Villa Loyola, where the ground is fully organic and Padre Joe declines to certify it. That is a long enough run that the certificate would only be telling the buyer what he already knows.
The coffee
The single-origin list runs eight bags, each named to its variety and process: a Guatemala Gesha finished anaerobic natural, a fully washed SL28 out of El Salvador, a washed Ethiopian heirloom, a wet-hulled Sumatra. Not one of them prints a roast date, an odd thing to leave off a bag from a house this exact about everything else.
The room
The room started as a coffee cart set inside the facility itself, so people could taste something while they watched it being made, and it took until 2020 for that cart to become a full cafe. Interior windows keep the production and quality-control teams in view from the counter, and on a weekday the place smells like the morning's roast and sounds like the work going on behind the glass.
