Curator’s note
There is not a pour-over on this bar, and that is on purpose — filter comes off a closely controlled FETCO and espresso off a volumetric La Marzocco with no scale or timer in sight, so nothing sits between the barista and the person ordering. The coffee is all bought in — Heart, Madcap, Parlor, Phil & Sebastian, Saint Frank, George Howell — and the Kaffe Tonic alone took two years of work on the tonic water.
The coffee
A multi-roaster bar built on outside roasters rather than a house roast — Severson named Heart, Madcap, and Parlor in 2016, with Color Coffee Roasters supplying an Ethiopia for drip at the opening. The current roster isn't named anywhere on the live site, and no packaged beans are sold.
A former jewelry store on a corner of Fourth Street, glass walls on two sides making a small footprint read wide open, and everything but the espresso machine stowed below the counter — pitchers, cups, brewing gear, all of it out of sight. What is left is a clean white room that empties into a wine bar called Gemini when coffee hours end.
