IYKYK! Coffee Lab

Two people met over coffee in 2005 and opened this counter two decades later without ever putting their names on it — a midcentury room with vinyl listening stations at the bar, a record rack, loaner headphones and a lending library. Who roasts the coffee is the one thing nobody will say, which is a strange silence in a shop this forthcoming about everything else.

The coffee sells under the shop's own labels with the roaster unnamed anywhere on the site, though sourcing is stated first-person: two traceable Guatemalas from partners at Guat Lab and a direct-trade washed Colombia. Three retail bags carry origin-level detail — B-Side, the decaf, comes from smallholders in La Unión, Nariño, tank-fermented and decaffeinated at Descafecol — but none lists a roast date or a named farm.

Inside Lot 579, the food hall at Pacific City, this is a retro-cool midcentury build: communal tables around an open plan, a high counter with vinyl listening stations, a record rack and loaner headphones, a lending library, and a back door onto the ocean. The tabletops are commissioned too, hand-illustrated with robots, disco balls and surfboards, which is more design than a food-hall counter has any obligation to attempt.
