The flagship bag comes off the family's own Guatemalan farm, roasted by an operation Jones has run since 1994, but this room is a satellite of the Raymond Ave roastery with a $3.00 manual brew slot on the board and no origin printed against it. It sits in the corner building that held Buster's for decades, and the affogatos come on Fosselman's ice cream — its own argument for stopping in.

The flagship bag is Finca Dos Marias Bourbon Rojo, off the family's own 3,000-acre Guatemalan farm, in a retail lineup of eight single origins where only three carry farm- or lot-level names and no roast dates are printed anywhere.

Jones took the two-story corner building Buster's held for 30 years and set out to keep its rustic fabric at Mission and Meridian intact. The view worth climbing for is from the upstairs window down onto Mission — and yes, there are chairs hanging from the ceiling.
