Curator’s note

The roaster is a ventless electric Bellwether, no gas and no exhaust, parked in the walkthrough between the coffee side and the dining room, though the green comes off Bellwether's own marketplace and the Golden Hour house espresso is one of Bellwether's blends. What is theirs is the room: a 1964 bank building, two years of permitting, and a case the owner bakes herself before service.

The coffee

Roasting happens in small electric batches on the Bellwether, no gas, no exhaust, a method Hughes says cuts the carbon footprint of roasting by 87 percent across a rotating lineup of about a dozen coffees, including the Golden Hour house espresso blend and single origins like Ethiopia's Shanta Globe natural. Green comes through Bellwether's marketplace rather than direct sourcing, and no bag label anywhere shows a farm, varietal, or roast date.

A 1964 bank at Dover and Westcliff, converted after nearly two years of permitting into 3,500 square feet of bright, rustic French room — crystal chandeliers and opal globes under a black exposed ceiling, herringbone tile inlaid into the wood floor, a commissioned mural on distressed plaster beside whitewashed brick. The Bellwether roaster was put in the walkthrough between the coffee side and the cafe side, in full view of everyone crossing, which is the single best decision in the building.
