Curator’s note
The black-and-gold Probat sits in the room with the bar built low around it, so the person roasting is the person taking the order. Gacia Tachejian ran clinical trials at UCLA before this, and every bag page reads like it: farm, producer, varietal, process, altitude — everything except the printed roast date, the one line she leaves blank.
The coffee
Sourcing is exclusively traceable single-origin through importers Sustainable Harvest and Covoya, and all three Laidrey cafes are supplied from this roaster in small light and medium batches. Bag pages go down to farm, producer, micro-region, varietal, process, and altitude, though no roast date appears on any listing.
Tachejian took the room's cue from Indonesian cafes — concrete against wood, navy walls, big windows — and set the bar low around the black-and-gold Probat so the person who roasted your coffee is the one standing in front of you. She wanted space to walk around and not feel cramped, which sounds like a modest ambition until you count how few coffee bars manage it.
