Curator’s note
Order a pour-over and the counter hands over the roast charted for acid, aroma and complexity, then takes more than five minutes to make it. That is the proposition: coffee roasted in-house since 2013 by a founding team of Q-graders, poured slowly by people who expect the chart to get read.
The coffee
Stereoscope roasts everything it pours on a Probat P12 in an Arts District warehouse, and the bags carry real origin detail — the Las Flores Java is spelled out down to a 36–48 hour controlled ferment with thermal shock at 1,700–1,900 masl — though no roast date is printed.
Stereoscope signed as the first tenant of the Brick Works, the retail-and-residential project raised on the site of Sunset's old Grocery Warehouse, and the flagship runs 936 square feet of it.
