They roast on San Franciscan machines and name the people who grew it: 40 smallholders at Farmers of Bomai in Papua New Guinea, the Guardia family at Hacienda Sonora. That is a lot of paperwork for a counter that also sells burritos, and the two halves sit together without any embarrassment at all.
The coffee
Quiet Prophet is the house espresso, and the single origins are documented down to variety, process, and altitude — Farmers of Bomai's anaerobic natural at 1600–1800m, the Guardias' Victoria 14 at Hacienda Sonora — though nothing on the site carries a roast date.
The design moment is on the outside wall: a commissioned mural that changes every year on the shop's own grant, most recently Austin Scott's 600-square-foot Altadena is Forever. The room itself is a strip-mall unit at the base of the foothills that came through the Eaton Fire — the center's walls blew into the neighbors' yards, and the shop stood.
