Curator’s note

Order the flight and the same bean comes back three times — as an americano, then under milk, then rebuilt into a signature drink — so what changes between them is the whole exercise rather than a garnish. It is a fussy thing to build a menu around, and this quiet Garvey Avenue storefront builds its whole morning on it.

The coffee

A multi-roaster bar: Monolith, Lumen, Civil and Tomodachi rotate through the filter list beside a house espresso blend of dried apple, cherry and dark chocolate. The bags on the retail shelf are labelled down to the producer — Edwin Noreña's Caturra from Quindío, co-fermented in mossto.

White walls, a polished concrete floor and a grey banquette, with drinks arriving on stainless trays in ceramics stamped 一慧咖啡. The bar runs its own latte art throwdown — Slayer and Minor Figures put up the prizes for the first anniversary — which is what these baristas do with a slow hour.
