Coffeelove

The paperwork on these beans is the interesting thing: varietal, altitude, process and fermentation times published lot by lot, down to an Ethiosar that took 90.3 at the Los Favoritos auction. The site calls itself Coffeelove Roasters on one page and credits 'our guest roasters' on another — whoever documents a ferment that closely ought to be willing to sign it.

The lots are documented down to the ferment (an El Vergel Estate Caturra with a 48-hour anaerobic pre-ferment and a five-day watermelon co-ferment, an Ethiosar that took 90.3 at Los Favoritos), though nothing carries a roast date and three of the four retail coffees are sold out.

The cafe is a counter on the mezzanine of The Last Bookstore, inside downtown's Spring Arts Tower, so the room was authored for books and the coffee is a tenant in it. Read it as a bookstore that sells espresso and it makes more sense than reading it the other way.
