Curator’s note
Everything is roasted in the building (Gjusta buys it wholesale), and Ed Moffatt, who learned the trade in Melbourne, roasts here like someone who expects to be checked. The Kenya bag names the cooperative, the varieties, the process and an altitude band where most bags stop at the country: writing for people who actually turn the bag over.
The coffee
All of it is roasted in the building, and the origin listings go to farm level: Kenya Kainamui AA names the Ngariama co-op in Kirinyaga, four varieties, a washed process and 1740–2000 MASL.

The room
The Specialty Coffee Association's design platform picked the room up in 2023 for its functional transparent layout of roasting, brewing, cupping, and training: four jobs on one open floor with nothing walled off from the counter. They took the Zaferia building in December 2022 to get all four under one roof, and the layout is the argument.
