Curator’s note

The name means temperature, and DO brews to it lot by lot rather than to one house number — five single-origin pour-over lots on the board with their farms, their processes and their notes, down to a washed Panama Geisha. The one thing it will not tell you is who roasts any of it, a strange silence in a menu this literate.

The coffee

The pour-over list runs five single-origin lots printed with process and tasting notes, from a washed Panama Geisha down through citrus and jasmine to a Colombia Finca Buena Vista finished natural over a 120-hour anaerobic fermentation. Who roasts any of it goes unstated everywhere the shop speaks.

A tree grows in the middle of the seating area with the small tables set around it and along the walls — a first store across from Brea Mall that built its seating plan around something living. The rest is clean and contemporary and deliberately unfussy, which suits a bar whose name means temperature.
