Curator’s note

The roasting half of the partnership taught himself at home more than a decade ago, and the shelf he built out of it is sorted into six tiers that all begin with the same letter, Everyday climbing to Exceedingly Rare. A roaster who ranks his own lots that finely has decided the conversation at the counter is half the product.

The coffee

Roasting happens in the front window on a San Franciscan drum, with the green stacked beside it in Newland Coffee Imports sacks and every lot taken light in the Nordic way, and the shop posts its own recipe for nine brewers, the Orea V4 and the Ceado HOOP among them. Retail lots print the processing village, the elevation and the process, down to an Ethiopia dried in the cherry at Buku Abel between 2,000 and 2,400 meters at $45 for 250 grams, though its product page gives no roast date.

The room

The room is the pastry chef's own design, deep navy and gold throughout: a feature wall carrying the house songbird in headphones, line-drawn large in gold, vinyl sleeves standing on ledges under a gallery picture light, a mustard corduroy sofa, and a pale stone bar with the grinders set on it. The same bird and wordmark are carried in gold across the whole shopfront glass, so what meets the street is the mark that is painted inside.
