Curator’s note

The plan for the Poway unit was a counter in front and the roastery behind it, and the stated point was being able to see into the roasting room. The bean pages keep that posture: Aurora is filed as a blend that the page concedes is almost always a single-origin natural Brazilian, which is a strange thing to volunteer in public and a good sign about who writes them.

The coffee

An automatic Marco brewer handles the pour-overs at the bar, next to a La Marzocco espresso machine. Each single origin is listed with its mill or farm class, region, altitude and process, down to the Gerba Dogo mill in Ethiopia's Guji Zone at 2,125 meters dry-processed and small family farms around Pitalito in Huila at 1,500 to 1,800 meters washed, though no product page names a varietal or prints a roast date.

The room

A large unlabeled map with the Coffee Belt painted in color fills an off-white wall just inside the door, white round tables running down that side of the room and two shelves of sky-blue logo bags standing beside the register. The bar is L-shaped with one rounded corner and the menu is white paper tacked to a sheet of plywood, a finish built to move people along, which leaves the umbrella tables out on the patio as the place where the sitting tends to happen.
