Curator’s note

The beans behind this counter come from a Pasadena roastery that has run since 1994 and owns part of its own Guatemalan farm, Finca Dos Marias. That strength belongs to Pasadena — here it is a licensed stand inside Hollywood Burbank pouring lavender lattes alongside grab-and-go sandwiches, and nothing on the board names an origin.

The coffee

The beans trace to a Pasadena roastery running since 1994 with a share of its own Guatemalan farm, though nothing poured at this counter carries an origin or a varietal name.

This counter sits inside Hollywood Burbank Airport under a licence, operated by Metropolitan Culinary Services on the airport's food-and-beverage contract, so the fixtures belong to the terminal rather than to Jones. What Jones supplies is the coffee: the Pasadena roast, part of it grown on the family's own finca in the Guatemalan highlands.
