Curator’s note
A working roaster with a decade in this room, naming farms rather than countries on its shelf, among them Finca San Antonio in Chalatenango, El Salvador. The filter line here is a rotating single-origin drip, not a manual-brew program, and the company's one named-architect room, a Relativity Architects project, is in Hollywood, not here.
The coffee
The company roasts its own with real process detail (Maillard and development-phase language on product pages), and the retail shelf runs seven named single-origin lots plus the Commissary Blend, including Finca San Antonio in Chalatenango, El Salvador, from a named farmer. In the cafe, the brewed line is a rotating single-origin drip named by origin alongside espresso, but no manual-brew service appears on the menu.
The owners drew the bar themselves — retro modern, a bold color palette set against a lot of stainless steel — in a room that stays airy despite all that metal. It is the only Commissary with a full breakfast and lunch kitchen, so it runs busier at midday than a pure coffee bar.
