Curator’s note

Achilles keeps direct trade relationships with some of its suppliers and prints none of them, sending the question instead to a counter it calls the best baristas in the industry. Sourcing here lives in people rather than on paper, and it holds up exactly as well as whoever is working the bar that morning.

The coffee

Everything is roasted weekly in small batches at the company's downtown roastery, and the bar keeps a single-origin espresso alongside a batch brew of the house Achilles Blend, drawn from South and Central America. The bean list runs two dozen lots with Rwanda, Tanzania and Zambia on it beside the Latin American names, down to a Colombia off Finca Monteblanco finished as a purple caturra tropical natural co-ferment, though the product page carries no roast date.

The room

This is ground-floor retail in Park 12, a Greystar tower of 718 apartments over 45,000 square feet of shopfront put up as one $400 million piece of Ballpark Village. Seating runs indoors and out with free WiFi, in a coffee bar that arrived with the building rather than finding one.
