Curator’s note

The Quan brothers opened in 2015 pouring Four Barrel and De La Paz exclusively, and a decade later nothing on that board names a roaster or an origin at all. The bakery half never went vague — it still names the butter and the chocolate on the page.

The coffee

At launch the owners named two San Francisco roasters, Four Barrel and De La Paz, as their exclusive pours, both elite-tier specialty names, but that pairing belongs to 2015 and the shop names no roaster now. The live board runs drip, cold brew, pour over and espresso without printing a roaster or origin anywhere, and the online store sells no beans, so ask who's in the hopper before you order.

All 2,600 square feet were built out by PSSDC, whose craftsmen made every piece of furniture and every light fixture in their own Arts District warehouse. The coffee lands in West River Field Lab ceramics, which is a level of fuss most bakery counters never get around to.
