There is a neat circle in this one: the Cerritos bar that first put Aquilo behind an espresso machine now buys its coffee from him. Everything Seven Syllables pours it roasts itself, and the house sauces are built in the shop too, down to the ube macapuno and the buko pandan.
The coffee
They roast their own and ship the week's coffee every Monday, though the published detail stops at country and region — the current Rōnin single origin is a Peru from San Jose de Lourdes, with no varietal or roast date printed.
Pour-over holds a year-round spot on the board next to a house espresso blend they roast themselves, and the signature drinks run on sauces made in house down to the ube macapuno and the buko pandan.
