Curator’s note

Sixteen single-origin lots and not one blend, every page carrying producer, region, variety, process and altitude, and a cezve program brewing Turkish coffee the traditional way on the drink board. Truc Ngo went to the US Latte Art Championship finals in 2024 and the US Barista Championship in 2025 out of this room.

The coffee

Sixteen named single-origin lots and no blends, roasted on site in small batches and rotated seasonally, with producer, variety, process, and altitude on the product pages and no roast date printed anywhere.

Roasting runs on site in a room visible behind the bar, on the ground floor of the Aliso in the Arts District. The retail shelf in front of it holds sixteen single-origin lots and no blends, which is the same decision made twice: show the work.
