Maru Coffee

Maru holds the room and the cup to the same standard: a converted warehouse with the original gridded concrete floor left exposed, and coffee it roasts itself with the farm named lot by lot, from Yeison Tovar in Colombia to the Kamagogo factory in Kenya. The company has grown to four rooms and a Glassell Park roastery, and the retail pages still don't publish altitude for every lot.

Maru roasts its own coffee on a 15-kilo Giesen and a 15-kilo Loring Falcon, and the retail lineup names the producer in the lot title (Yeison Tovar in Colombia, Kenya's Kamagogo Coffee Factory), with process detail on each. Pour-over runs on the bar here, though the retail pages don't publish altitude on every lot.

The room is a converted warehouse and wears it deliberately: the original gridded concrete flooring left exposed, walls in glossy eggshell white, a darker wood ceiling cut with two skylights, seating built around one large communal table. It is a minimal room in the exact sense: less material rather than less thought.
