A village counter that used to pour Peet's now sells a $7.50 Monteblanco with its process and roast printed beside it, off a farm in Acatenango that a co-founder's cousin manages, roasted by Blue Hummingbird in Irvine. The barn around it was fitted out like it means to stay: blackened board-formed timber, a pressed-tin ceiling, a gallery wall of black-and-white ranch photographs.
The coffee
Blue Hummingbird roasts in Irvine, and the flagship is a direct-trade 100% Bourbon nano-lot from Finca La Torre in Acatenango, the Perez family farm managed by cofounder Christian's cousin, alongside a retail catalog of fourteen named coffees like Kenya AB Ngomano and Ethiopia Guji Gigesa Natural. Espresso at the counter is a double shot of single-origin Guatemala, and bags sell for $19.50 a 12-ounce with no roast date printed on any listing.
The Canyon House is a white board-and-batten barn with exposed rafter tails and red steel window frames, and inside it the bar is blackened board-formed timber under a white stone top, five black cone pendants and a pressed-tin ceiling overhead. A salon-hung wall of framed black-and-white ranch photography faces one long white-oak communal table — a room dressed for the ranch it sits on rather than for a coffee brand.
