Hidden House Coffee

A 5-kilo Primo went into this room in 2013, in full view of whoever was standing at the counter — and there is not much space to hide a roaster here, with the machine, the bar and the pastry kitchen sharing under 1,100 square feet. Retail roasting has since moved to the 18-kilo machine in Santa Ana, but Briggs still walks the farms himself.

Everything on the shelf is the brand's own roast, bought direct trade with the founder visiting farms; the live August 2026 catalog runs eight coffees, including a Colombia Penas Blancas Estate whose page names the producers, Nestor Lasso of El Diviso and Jhon Vergara, and a 48-to-72-hour anaerobic pre-fermentation. Varietal is printed on all four single origins, but the house blend and espresso rotate seasonally with no fixed origin, and no product page prints a roast date.

The shop is an 1890 cottage on Los Rios Street, one of the oldest continuously inhabited residential streets in California — yellow and gabled behind a green picket fence, with most of the seating out on the front patio under the jacarandas. Roaster, coffee bar and pastry kitchen share under 1,100 square feet inside against a reclaimed-wood wall, which is less a buildout than a house that was talked into it.
