Smoky Hollow Roasters
Curator’s note
A certified Q Grader who also works as a voice actor is not the usual profile, and roasting in front of the customers rather than behind them is not the usual arrangement either. The sourcing is where the credential shows: an anaerobic natural from smallholders around the Banko Chelchele station, a washed Guatemala Bella Carmona dried in a greenhouse.
Their signature espresso blend, roasted medium-dark for browned butter, pecan, and sweet baker's chocolate.
The coffee
Roasted in-house on a Probat P12/2 by a certified Q Grader, with process and varietal spelled out on the single origins, though no roast date appears on any of the eight SKUs.

The room
The whole shop is one 1,700-square-foot room where the bar and the roastery share the floor, a Probat P12/2 out in the open with bar stools pulled up facing it. The 2019 build-out put the espresso system under the counter on a Mavam, which leaves the roaster as the thing the room is arranged around.
