Curator’s note
The founder made a living opening coffee bars for other companies while hunting for a location of his own, a long stretch of building rooms that were never going to be his. This one is, and the signature list shows it: a Bloomed Fig, espresso with Turkish fig, orange peel, vanilla and orange blossom.
The coffee
Necessity roasts its own: single origins out of Colombia, Costa Rica and Ethiopia, poured unadorned on Poursteady PS2 machines. The web shop holds exactly one bag, named for its producer, David Ramirez, at $20, with no region, varietal, process or roast date on the page.
The room
Bright, and dressed in the brand's cream-and-coral palette with sage green accents carried right through to the hardware: the La Marzocco on the bar here is white, the one in San Marcos bright pink. The corner at 2nd and F comes with a mighty ficus overhead, which is the one feature no build-out can install.
