Curator’s note
Seesaw is a jobs program that also roasts seriously, and the two halves have not quite met: the Buena Park roastery publishes altitude and variety on every lot, while the board in Norwalk names no origin at all. For a room built to put adults with disabilities into paid work, letting the brunch lead is a fair order of business.
The coffee
Roasted in-house in Buena Park and sold with origin, process, altitude and variety on every product page, though no roast date is published anywhere and the Norwalk drink list names no origin at all.
The parent runs a barista certification program with named instructors and a training center in Walnut, but the Norwalk bar carries no pour-over and none of the single-origin espresso or Kyoto-style cold brew that Buena Park's menu names.
