Curator’s note

The founder is a Navy veteran, and after a trip to a Kyiv coffee bar called One Love he set up a 501c3 to keep that shop, its staff and its six rooms across the city from closing for good. Seven Seas says it goes to the farms itself and makes sure the growers are paid a livable wage, which is a sentence plenty of roasters print and few are ever asked to answer for.

The coffee

Devin Fralin roasts for the whole company at the South Park facility, so nothing poured here was roasted on the premises: the pour-over line runs single origin, and the house espresso is a blend of Guatemala, Ethiopia and Brazil. The one retail bag it lists is a medium-light Candy Blast from El Vergel-Estate in Colombia, honey and watermelon processed, Caturra and Colombia at 1750 meters, though no product page prints a roast date.

The room

A rounded tower clad in vertical wood slats rises over teal panels and a black steel-and-slat pergola at the door, with a Cedros district banner on the lamppost out front. Inside is plainer than the facade promises: a vinyl plank floor under a dropped ceiling of recessed cans, a red neon ship crest on dark cabinetry, a wall of hanging apparel and branded mugs, and the drink list printed on paper and taped up beside two blank whiteboards.
